Jerk Seasoning Recipe

Christmas is about a week away and I still have some shopping to finish.  And there are always those certain people who are a bit challenging to buy a gift for.  (“Do we really have to get a gift for her?!”)  Yes.  We really have to get a gift for her.

Fortunately, I’ve been immersed in my Paleo cookbooks and have discovered herbs and spices.  In one particular book, “Well Fed 2” by Melissa Joulwan, there are even recipes for spice mixtures that you can make by your very own self.  In little jars these spice mixtures make lovely, thoughtful, cheap holiday gifts.

However, I’ve found that Joulwan’s recipes are just a bit too spicy for my delicate palette, and so I’ve tweaked them a bit.  Here is my tweaked version of her Jerk Seasoning Recipe.

‘Homemade Taco Seasoning…’

You know those spices that you have in your cupboard that you had to buy for one recipe and haven’t used since? Everyone has them and they add up. There are a few recipes you can likely make from them that you didn’t even realize. Like Taco Seasoning! Why buy a $3.00 packet of Taco Seasoning when you can make your own from spices you already have?? Try this recipe!

Homemade Taco Seasoning

•1/2 tbsp paprika
•1 tsp garlic powder
•1 tsp onion powder
•1 tsp chilli powder (or more depending if you like spice)
•1 tsp ground coriander
•1 tsp cumin
•1 tsp oregano
•1 tsp turmeric
•dash of chili flakes (optional)
•1 tsp white sugar
•salt and pepper

Brown your onion, garlic, and jalapeño then add meat (or however you prepare your taco filling before adding the spice pack). Cook meat until almost done and add the spices…

BBQ Magic Rub

Great for chicken and pork chops. Apply rub at least an hour before cooking, up to a day.

Ingredients

  • 1/2 cup paprika
  • 1/4 cup kosher salt
  • 1/4 cup sugar 
  • 2 tablespoons mustard powder
  • 1/4 cup chile powder
  • 1/4 cup ground cumin
  • 2 tablespoons ground black pepper
  • 1/4 cup granulated garlic
  • 2 tablespoons cayenne (or less to taste)

“Everything” Bagel Seasoning

2 Tbs. dried minced onion

2 Tbs. black sesame seeds (or toasted white sesame seeds)

1 tbsp. poppy seeds

1 tbsp. dried minced garlic

½ tsp. kosher (coarse) salt

¼ tsp. ground black pepper

~Mix all ingredients together. Keep in an airtight container. Sprinkle on anything and everything.

Put on bagels, crackers & cream cheese, use as a chicken coating….
